The methodological approach consists in making physico- chemical analyses of ground and biometric analyses of the fruits and seeds. According to the got results it arises that it there was an adaptation of the varieties studied with the conditions of the medium. This adaptation was expressed by good qualitative and quantitative characters, although the trees are in youthful phase. The ACP STATE allowed discriminating the Picual variety by the characters of the core and the fruit, whereas the Sigoise variety characterizes by sheets with high length. The phenological phases of the olive-tree in the zone of study are marked by precocity Notre travail, porte sur la détermination des caractères morphologiques de 05 variétés cultivées dans cette exploitation et la définition de l’effet des conditions écologiques de la région sur le développement de l’espèce dans les zones sahariennes (cas d’Ouargla).
