Abstract: This study aims to evaluate and upgrade the Algerian date palm seeds, originating from south eastern of Algeria (Ouargla region) . , and that given the importance of these circumstances food products and medical. twelve Algerian date palm seeds (Phoenix dactylifera L.) varieties (Deglet-Nour, Ghars , ,Degla Baida,Hammraya ,Tafezouin, Tamesrit, Takermoust,Baid Hmam,Bent Qebala,Ksseba,Bajmil and Ali ourached). The study of the lipid fraction of the oil in the date seeds of twelve 12 varieties of date palm enabled us to determine the levels of oil, and the main indices (characteristics) physico-chemical oil; the values found belong to the range of edible vegetable oils. The analysis by gas chromatography of fatty acid methyl esters, shows that oils contains mainly fatty acids oleic, linoleic, palmitic and stearic,less fatty acid in the tale us fatty acid capric, lauric and myristic have also been detected . The total phenolics, taking into account tocopherols of date seed oil , were determined, The total phenolic contents of the oils, ranged from 0.562 to 1.182 mg/g The phenolic and the flavonoid content of date seeds found changed between 1.73– 14.82 mg Gallic acid equivalent/g DW and 0.057–0.739 mg Rutin equivalent/g DW respectively. all the samples showed a significant antioxidant activity, Results showed that date seeds could be used as ingredients to enhance the nutritional value of some functional. The antioxidant of methanolic extracts date seeds assessed using three assays varied between 5.91 –46.19 mM V.E equivalent, 5.15–34.98 mM V.C equivalent and 2.42– 4.25 mg/l for Phosphomolybdenum Assay (PM), Ferric ion reducing antioxidant power assay (FRAP) and IC50 of DPPH respectively. The antioxidant activity by electrochemical method, which is based on the inhibition of the free oxygen with CV technology, was also estimated. All methanol extracts have the ability to inhibit the O2.- Within the capacity of ascorbic acid, the values of of IC50 ranged from 0.154 - 0,236 g / l
