dc.description.abstract | Les leuconostoques sont des bactéries lactiques Gram-positives,catalase négatif, non-pathogènes, tolérant les milieux acides,capable de produire le CO2,les produit aromatiques,les acides organiques.les étude ont montrer qu‟ils sont des bacteries lactiques ont la capacité de produire des composé antibacteriennes type bacteriocine qui ont un effet sur listeria monocytogénes.le but de ce travail est la sélection des souchs de leuconstoc productrices des substances antibacterienne et l'étude de ça nature Ce travail nous a permet d‟isolé 17 souches lactiques de différentes habitats (lait de chèvre, lait de vache, fromagetraditionnel..) et on a les identifier par les tests basiques jusqu‟à l‟atteindre aux souches des Leuconostocs. Suivi d'un purification. Le criblage des souches Leuconostocs avec les souches pathogènes (Staphylococcus aureus, Esherishia.coli, Pseudomonas aerogenosa, Salmonella typhi, Bacillus subtilis..) a donné des résultats positives même après les différents traitements effectués sur les surnagents des Leuconostocs, les substances secretes dans ces surnagents contiennent des protéines « bactériocine » totalement sensibles à l‟action des enzymes protéiolytiques mais elles peuvent résister le traitement à 70°C 90°C 110°C pendant 20 min . Les résultats de notre travail ont confirmé que les souches isolées ont surement le pouvoir antimicrobien contre les bactéries pathogènes | - |
dc.description.abstract | Leuconostoc are Gram-positive lactic acid bacteria, catalase negative, non-pathogenic, acid-tolerant, they are able to produce CO2, aromatic products, organic acids. The studies have shown that they are lactic bacteria have the capacity to produce bacteriocin-like antibacterial compounds that have an effect on Listeria monocytogenes . the purpose of this work is the selection of strains of leuconostoc producing antibacterial substances and studing of this nature In our work we have isolated 17 lactic acid strains from different habitats (goat's milk, cow's milk, traditional cheese, etc.) and we have identified them by microbiological tests, biochemical tests and physiological tests until we reach that are strains of Leuconostocs. Then, we continued the study of the antimicrobial activity of isolated strains by antagonism test, direct and indirect interaction methods to consult and confirm the type and nature of substance secreted by these strains. The screening of Leuconostoc strains with the pathogenic strains (Staphylococcus aureus, E. coli, Pseudomonasaerogenosa, Salmonellatyphi, Bacillus subtilis ..) gave positive results even after the different treatments carried out on the supernatants of Leuconostocs, the substances secreted in these supernatants contain "bacteriocin" proteins fully sensitive to the action of proteolytic enzymes but they can resist the treatment at 70 ° C 90 ° C 110 ° C for 20 min. The results of our work have confirmed that the isolated strains have certainly the antimicrobial power against pathogenic bacteria | - |
