Abstract: | Pendant de nombreuses années, le lait de chamelle a été la principale source de
nourriture des peuples nomades. Cependant, le lait se distingue par une teneur
élevée en vitamine C et en niacine et par la présence d'un puissant système
protecteur. Dans ce travail nous avons axé notre recherche sur les espèces
thermorésistantes de bactéries lactiques isolées à partir lait de chamelle de la
région d’Ouargla. Après une fermentation spontanée de deux échantillons du lait de
chamelle collectés à partir des troupeaux appartenant à deux élevages différents de
la région d’Ouargla.
Les résultats des études précédentes montre que les espèces identifiées
appartiennent aux genres ( Lactococcus, Lactobacillus, Enterococcus et
Leuconostoc).
La capacité de ces souches à inhiber un groupe de bactéries pathogènes est
confirmée par les résultats des interactions entre les souches lactiques isolées et
pathogènes utilisées dans cette étude. Qui sont Staphylococcus aureus, Escherichia
coli et Pseudomonas auroginosa For many years, camel milk was the main food source for nomadic peoples. However, milk is distinguished by a high content of vitamin C and niacin and the presence of a strong protective system. In this work we focused our research on of heat-resistant species of lactic acid bacteria isolated from the camel milk of Ouargla region. After spontaneous fermentation of two samples of camel milk collected from herds belonging to two different herds in the Ouargla region. The results of previous studies show that the identified species belong to the genera (Lactococcus, Lactobacillus, Enterococcus and Leuconostoc). The ability of these strains to inhibit a group of pathogenic bacteria is confirmed by the results of interactions between isolated and pathogenic lactic acid strains used in this study.
