Abstract: | Le but de cette étude consiste à évaluer l’effet de type de fermentation sur la qualité et la
conservation d’un fromage frais. Deux types de fermentation sont utilisés pour fabriquer un fromage frais
à partir de lait de chèvre issu de la région de Mkhadema, Ouargla. Le premier par fermentation spontanée
et l’autre fermenté par une souche autochtone Leuconostoc sp. La conservation est assurée par entreposage
à 4°C soit par ou sans addition de sel. La qualité microbiologique est investiguée par le dénombrement de
certains microorganismes pathogènes et d’altération. La qualité physicochimique correspond à la
détermination du pH et de l’acidité ainsi que la détermination du taux de la matière grasse.
Les résultats du control microbiologique montre que le lait de chèvre et le fromage frais sont de
qualité acceptable (charges microbiennes de la FMAT de 1,3.106 et 2,58.105UFC/ml pour les bactéries
lactique et l’absence totale des germes pathogènes (Staphylococcus aureus, Clostridium sulfito-réducteur),
Sur le plan physicochimique, les résultats de la plupart des échantillons du lait et du fromage obtenus sont
proches ou conformes aux normes, (un pH de 6,47 et une acidité de 17° avec 1,7% de matière grasse pour
le lait et un pH de 4,66, une acidité de 23° avec 1.5% de matière grasse pour le fromage). Après conservation
à 4°C pour les deux types de fromage avec sel et sans sel, les résultats montrent l’absence totale des
(coliforme totaux et fécaux, Staphylococcus aureus, Clostridium sulfito-réducteur et levure et moisissure),
mais il existe une certaine différence pour FMAT et les bactéries lactiques d'une charge de 1,04.108UFC /
g et 8,4.107 UFC / g pour le fromage avec sel par contre pour le fromage sans sel une charge indénombrable
ce qui explique l ' effet de sel.
L’utilisation d’une souche lactique conduit à l’amélioration de la qualité du fromage et son
conservation The aim of this study is to evaluate the effect of the type of fermentation on the quality and conservation of a fresh cheese.
