Abstract: | Le cracking, ou fractionnement, omni présent dans l’industrie agroalimentaire, ce process est au cœur de
la fabrication des aliments ultra-transformés, afin de leur procurer faible coût de production, facilité à être
consommés, attractivité en termes d’aspects, de textures, de couleurs, de saveurs ou encore, de
conservation.).
La perte de l’effet “matrice“, due notamment au fractionnement des aliments d’origine en ingrédients
(cracking) puis leur recombinaison en aliment ultra-transformation, ces derniers, souvent très caloriques et
peu nutritifs, apportent surtout des calories vides, ces deniers sont classés selon leur degré de
transformation (classification NOVA et SIGA).
L’exposition à des aliments ultra-transformation pouvait être reliée à différentes maladies chroniques.
Certains aliments ont un effet récompensant et renforçant et vont procurer un plaisir lors de leur
consommation. Cette accessibilité des aliments riches et caloriques semble perturber les centres cérébraux
de récompense et les mécanismes d’homéostasie contribuant ainsi à l’apparition d’une addiction
alimentaire il s’agit d’une perte de contrôle de consommation des aliments dits « palatables », Le mot
palatable désigne un aliment riche en sucre, sel, gras ayant un goût décrit comme « agréable التكسر، أو التقسيم المنتشر في صناعة المواد الغذائية، هذه العملية في صميم تصنيع الأطعمة فائقة المعالجة، من أجل تزويدها بتكاليف إنتاج منخفضة، وسهولة الاستهلاك، والجاذبية من حيث الجوانب أو القوام أو الألوان أو النكهات أو حتى الحفظ.). فقدان تأثير "المصفوفة"، ويرجع ذلك على وجه الخصوص إلى تقسيم الأطعمة الأصلية إلى مكونات (تكسير) ثم إعادة تركيبها في الأطعمة فائقة المعالجة، وهذا الأخير غالبا ما يكون ذو سعرات حرارية كبيرة وغير مغذي جدا، توفر بشكل أساسي سعرات حرارية فارغة، يتم تصنيف هذا الأخير حسب درجة تحويلهم (تصنيفNOVAوالتصنيفSIGA.) يمكن ربط التعرض للأطعمة فائقة المعالجة بأمراض مزمنة مختلفة بعض الأطعمة لها تأثير مفيد ومعزز وستوفر المتعة أثناء تناولها، يبدو أن إمكانية الوصول إلى الأطعمة الغنية بالسعرات الحرارية تعطل مراكز المكافأة في الدماغ وآليات التوازن، مما يساهم في ظهور إدمان الطعام، هو فقدان السيطرة على استهلاك ما يسمى بالأطعمة " المستساغة" الأطعمة الغنية بالسكر والملح والدهون،لها طعم يوصف أنه "لذيذ" Cracking, or fractionation, omnipresent in the food industry, this process is at the heart of the manufacture of ultra-processed foods, in order to provide them with low production costs, ease of consumption, and attractiveness in terms of aspects, textures, colors, flavors or even conservation.
