Abstract: The study of the effect of temperature on the evolution of weight, size and moisture content of dates, in three cultivars of date palm: Deglet Noor, Ghars and Degla Beida is realized in the area of Ouargla in Algeria. This study found that, the onset of fruiting in the date palm does not require relatively high temperatures. The weight, size and moisture content of dates reach their maximum at temperatures that exceed 30°C. At fruit ripening, these characteristics decrease with decreasing temperature. The variations of weight, size and water content of dates follow the changes in temperature. Preliminary knowledge of the temperatures of region is imperative to locate area of cultivation of different cultivars of date palm.
