dc.description.abstract | Les dattes, fruits de palmier dattier (Phoenix dactylifera), constituent une matière première pour l’élaboration de nombreux produits à forte valeur ajoutée. Parmi ces derniers, le sirop appelés localement « Rob » occupe une place privilégiée au sein de la population saharienne. L’objectif de cette étude vise essentiellement à améliorer les propriétés glycémiantes du sirop issu des dattes variété "Ghars" (SBDG), par des incorporations d’huile d’olive et de spiruline à raison de 1, 2 et 3%, susceptibles d’abaisser son index glycémique, et d'améliorer ainsi ses propriétés diététiques. Parallèlement, une évaluation de la qualité organoleptique et hédonique des sirops est déterminée par des tests de dégustation. Le SBDG est extrait par diffusion dans de l’eau maintenue à 80°C, suivie d’une concentration à 60°C jusqu'à l'obtention d'un sirop à 72-75°Brix. Cette technique simple et peu coûteuse a permit l’obtention de rendements non négligeables (53.54 %). La teneur en eau du produit obtenu est égale à 29.8 %, et son pH à 4.77. Il renferme 70.66% de glucides, 1.24% de protéines et 1.45% de matière grasse. Son index glycémique est modéré (63.37% ± 0.84), et sa charge glycémique est élevée (44.77). Les résultats obtenus montrent que l’addition d’huile d’olive et de spiruline améliore la qualité nutritionnelle de SBDG, puisque sa teneur en lipides et en protéines passe de 1.45 et 1.24 à 4.41 et 3.15 respectivement pour des incorporations de 3%. L’index glycémique des sirops expérimentaux est abaissé suite aux traitements auxquels a été soumis le SBDG. Ainsi, de 63.37% ± 0.84, l’IG passe à 62.64 %± 1.20 ; 61.32 %± 1.77 ; 60.18 %± 1.99; pour SBDG + 1% HO ; SBDG + 2% HO et SBDG + 3% HO respectivement, et à 62.37 %± 1.00 ; 61.05 %± 1.17 et à 59.87 %± 1.60 pour SBDG + 1% Sp ; SBDG + 2% Sp et SBDG + 3%Sp respectivement. L’addition de spiruline semble être donc plus efficace que celle de l’huile d’olive dans les proportions équivalentes. Toutefois, selon la majorité des panélistes de dégustation, l’huile d’olive contrairement à la spiruline, n’affecterait pas les qualités, organoleptique et hédonique du SBDG. | en_US |
dc.description.abstract | تشكل التمور، فاكهة النخيل، مادة أولية لإعداد الكثير من المنتجات ذات القيمة الغذائية المضافة، منها دبس التمر المعروف محليا بــ " الرُّب" الذي يحتل مكانة مميزة عند سكان الصحراء. إن الهدف من هذه الدراسة هو تحسين الخصائص السكرية لدبس التمر المستخلص من صنف الغرس، المسمى ((SBDG، و ذلك بإضافة زيت الزيتون و السبيرولينا، بنسب 2,1 و 3 % ، والتي يمكن أن تخفض المؤشر السكري لهذا الأخير، و تحسين بذلك خصائصه الغذائية. تم بالموازاة إجراء تقييم للنوعية الحسية و الذوقية لدبس التمر بواسطة اختبارات التذوق. تم استخلاص دبس التمر((SBDG بالماء المسخن على درجة 80 مْ، ثم يتم تركيزه على درجة 60 مْ، حتى نحصل على دبس بدرجة 72 – 75 بريكس. سمحت هذه التقنية البسيطة، و غير المكلفة، بالحصول على مردودية لا يستهان بها. تتراوح نسبة الرطوبة في المنتج المتحصل عليه بــ 29,8، و معدل الحموضة بـ 4,77 ، و تقدر نسبة السكريات فيه بـ 70,66%، و البروتينات بـ 1,24%، و الدهنيات بـ 1,45% . أما مؤشره السكري فهو معتدل (0.84±% 63.37)، وتحميله السكري مرتفع .(44.77)تظهر النتائج المحصل عليها أن إضافة زيت الزيتون و السبيرولينا، تحسن من النوعية الغذائية لـ ((SBDG، لأن نسبة الدهون و البروتينات ارتفعت فيه من نسبة 1,45 و 1,24 إلى 4,41 و 3,15 على التوالي عند إضافة نسبة 3 %. انخفض المؤشر السكري لدبس التمر بعد المعالجات التي خضع لها حيث تراجع من ± %63.37 0.84إلى 1.20 ± % 62.64 و%61.32 1.77 ±و ± %60.18 1.99 على التوالي لـ SBDG + 1%HO ، و SBDG + 2%HO ، و SBDG + 3%HO. و تراجع الى 62.37 % ±%61.05 ,1.00± 1.17 و ±%59.87 .1.60 يظهر من خلال هده النتائج أن إضافة السبيرولينا أكثر فعالية من إضافة زيت الزيتون بنسب متساوية. إلا أنّ، حسب غالبية حكام التذوق، زيت الزيتون بخلاف السبيرولينا لا يؤثر على النوعية الحسية و الذوقية لـ ( . dc.description.abstract | The dates, fruits of date palm (Phoenix dactylifera), constitute a raw material to working out many products with a strong added value. Among the latter, the syrup locally called "Rob" occupies a privileged place within the Saharan population. The objective of this study primarily aims at improving the glycemic properties of syrup resulting from the dates of "Ghars" variety (SBDG), by incorporations of spiruline and olive oil at a rate of 1, 2 and 3%, likely to lower its glycemic index and thus to improve its dietetic properties. In parallel, an evaluation of the organoleptic and hedonic quality of syrups is determined by tests of tasting. The SBDG is extracted by diffusion in water maintained with 80°C, followed by a concentration to 60°C until reaching syrup of 72-75°Brix. This simple and inexpensive technique allowed obtaining considerable outputs (53.54 %). The moisture of the obtained product is equal to 29.8 %, and its pH with 4.77. It contains 70.66% of carbohydrate, 1.24% of proteins and 1.45% of crude fat. Its glycemic index is moderate (63.37 % ± 0.84), and its glycemic load is high (44.77). The obtained results show that the addition of spiruline and olive oil improves nutritional quality of SBDG, since its content of lipids and proteins passes from 1.45 and 1.24 to 4.41 and 3.15 respectively for incorporations of 3%. The glycemic index of experimental syrups is lowered following the treatments to which the SBDG was subjected. So, from 63.37 % ± 0.84, the IG passes to 62.64 % ± 1.20; 61.32 % ± 1.77; 60.18 % ± 1.99; for SBDG + 1% HO; SBDG + 2% HO and SBDG + 3% HO respectively, and to 62.37 % ± 1.00; 61.05 % ± 1.17 and to 59.87 % ± 1.60 respectively for SBDG + 1% Sp; SBDG + 2% Sp and SBDG + 3%Sp. The addition of spiruline, thus, seems more effective than that of the olive oil in the equivalent proportions. However, according to the majority of the degustation panelists, the olive oil contrary to the spiruline, would not affect the qualities, organoleptic and hedonic of the SBDG. | - |
