Abstract: | Le lait camelin qui se caractérise par une qualité nutritionnelle et thérapeutique
exceptionnelles, dues à sa composition physico-chimique spécifique, mérite d’être bien
exploité. Dans ce cadre nous avons réalisé cette étude afin de comparer la qualité physicochimique du lait issu de deux saisons différentes (hiver, printemps) dans l’élevage extensif. La
comparaison de la composition moyenne du lait d’hiver (Densité 1,031±0,002, pH 6,82±0,03,
Acidité Dornic° 14,67±1,61, MS % 13,0±1, MG % 2,30±0,18, Protéine% 3,26±0,24, Lactose
4,67±0,35%, Cendres (g/l) 8,79±0,65). Et au printemps (Densité 1,027±0,003, pH
6,62±0,02, Acidité Dornic° 17,83±0,58, MS % 12,41±0,65, MG % 3,67±0,15, Protéine%
3,17±0,032, Lactose 4,51±0,05%, Cendres (g/l) 8,51±0,095). Les résultats obtenus montrent
que la saison a un effet significatif sur le pH, l’acidité Dornic, le taux en matière grasse.
En revanche , cet effet était non significatif sur la densité, le taux en lactose, en protéines et en
cendres. Camel milk is characterized by a specific nutritional and therapeutic quality, which deserves to be well exploited and studied. In this context, we carried out this study in order to compare the variation of physicochemical statut of milk into two different seasons (winter, spring) in extensive livestock. The comparison of average of milk composition was in winter (Density 1.031 ± 0.002, pH 6.82 ± 0.03, Dornic acid 14.67 ± 1.61, DM% 13.0 ± 1, Fat% 2.30 ± 0 , 18, Protein% 3.26 ± 0.24, Lactose 4.67 ± 0.35%, Ash (g / L) 8.79 ± 0.65). And spring milk wass (Density 1.027 ± 0.003, pH 6.62 ± 0.02, Dornic acid 17.83 ± 0.58, DM% 12.41 ± 0.65, Fat% 3.67 ± 0.15, Protein% 3.17 ± 0.032, Lactose 4.51 ± 0.05%, Ash (g / l) 8.51 ± 0.095). The results obtained show that the season has a significant effect on: pH, Dornic acidity, fat content. In this study, the effect of season on density, lactose, protein and ash was not significant.
