dc.description.abstractCette étude a pour objectif de classer sept (07) cultivars de dattes molles répandus dans la région d’Ouargla « Ghars, Litim, Tanslit, Timdjouhert, Ali ou Rached, Takermost et Tacherwit », selon leur« IG ». Les dattes diffèrent d’un cultivar à un autre dans leurs mensurations, leur forme, leur couleur et leur consistance sont totalement différents.en_US
dc.description.abstractThis study aims to classify seven (07) cultivars prevalent soft dates in the region of Ouargla "Ghars, Litim,Tanslit, Timdjouhert, Ali ou Rached, Takermost and Tacherwit" according to their "IG". Dates vary from cultivar to another in their measurements; shape, color and texture are totally different. Their water content varies between 9.67-14.37%, pH between 5 and 6 and their ashes rate is around 2%. Their sugar content varies between 70.8% - 82.65%. Their reducing sugar content varies between 54.34% and 78.12%, sucrose between 1.64% and 12.54%. The crude fiber content around 2% excluding Timdjouhert dates which the content of this polysaccharide poster 3.34%. Pectins are present in all cultivars in varying amounts between 1.44% and 6.03%. The values of the glycemic index (GI) are between 24.80 and 42.79. Finally, the glycemic load varies from 15.00 to 24.80. The studied soft dates can therefore be classified as low GI foods because it is less than 55-
