Abstract: Les bactéries lactiques sont connues par leur capacité de produire des composés actifs lors de leur croissance à savoir les acides organiques qui acidifient le milieu. Leur utilisation pour une application industrielle donnée est déterminée par leurs propriétés fonctionnelles et technologiques. Le présent travail est une contribution d'étudier les Leuconostoc du lait cru de chèvre et de chamelle. Après un isolement de cinquante souches par l'utilisation d'un milieu sélectif, les isolats ont subi une purification qui a conduit à obtenir quatorze souches, des tests physiologiques et biochimiques différents ont été réalisé par la suite pour identifier ces bactéries et évaluer leur potentiel technologique pour l'usage dans l'industrie laitière. Cette étude nous a permis de révéler la capacité de production de dextrane chez les Leuconostoc mesenteroïde sub.sp qui va donner aux aliments une meilleure texturation. Les résultats de l'évaluation des aptitudes technologiques indiquent que l'ensemble des souches ne présentent pas un bon pouvoir protéolytique qui a un effet négatif lors de la fermentation du lait, ni un pouvoir lipolytique, ceci rend ces bactéries très exigeantes, L’ensemble de ces résultats souligne l’importance de l'utilisation de ce genre dans l'industrie Agro-Alimentaire pour ameliorer le domaine de fabrication laitière.
Lactic bacteria are known for their ability to produce active compounds during their growth depend on the organic acids which acidify the medium. Their use for some given industrial application is determined by their functional and technological properties. The present work is a contribution to study the Leuconostoc of goat’s and Camel’s raw milk. After the isolation of fifty strains by the use of a selective medium, the isolates underwent a purification which led to fourteen strains, different physiological and biochemical tests were subsequently carried out to identify these bacteria and evaluate their technological potential to be used in the dairy industry. This study has allowed us to reveal the dextran production capacity in Leuconostoc mesenteroid sub.sp that will give food a better texturing. The results of the assessment of the technological abilities indicate that all the strains do not have a good proteolytic power which has a negative effect during the fermentation of the milk, or a lipolytic power, this makes these bacteria very demanding. These results highlight the importance of using this genus in the food industry to improve the dairy manufacturing field.
تعرف البكتريا المصنعة لحمض اللاكتيك بقدرتها على إنتاج مركبات نشطة أثناء نموها كالأحماض العضوية التي تعمل على جعل الوسط حامضي. هذا العمل هو عبارة عن دراسة أحد أنواع هذه البكتيريا والذي يسمىLeuconostocحيث تم عزله من الحليب الخام للماعز والإبل، بعد عزل خمسين سلالة عن طريق استخدام أوساط زراعة انتقائية، بعد ذلك خضعت هذه السلالات لعملية تنقية أدت للحصول على أربع عشر سلالة نقية، كما أجريت فيما بعد اختبارات فسيولوجية وبيوكميائية مختلفة لتحديد ومعرفة إمكانات هذه البكتيريا المعزولة حتى يتم استعمالها في صناعة الألبان والأجبان. سمحت لنا هذه الدراسة بالكشف عن قدرة إنتاج الديكستران (متعدد السكر) من طرف Leuconostoc mesenteroïde sub.spوالذي سيعطي للأغذية المصنوعة تركيبة أفضل. تشير نتائج تقييم القدرات التكنولوجية لهذه السلالات المعزولة إلى عدم قدرتها على هدم واستعمال البروتينات ولكنها خاصية مرغوبة لان هدمها له تأثير سلبي إذ يؤدي إلى ظهور طعم مر غير مرغوب فيه أثناء عملية تخمر الحليب، كما أنها لا تملك أيضا القدرة على هدم واستعمال الدهون، كل هذا يجعلها بكتيريا متطلبة
