Abstract: | En Algérie, la culture de la datte fait partie des filières stratégiques et pour que la datte algérienne se place sur
les marchés internationaux, les entreprises d’exportation sont désormais tenues de mettre en place des procédures
permettant d’assurer la sécurité des aliments en se basant sur le principe du plan de maitrise sanitaire. L’objectif de cette
étude, réalisée au niveau de l’unité Tayba à Ouargla, est de faire un diagnostic et une analyse de l’état de la chaine de
production des dattes, en matière de la qualité, afin d’identifier les points forts et les insuffisances et éventuellement
proposer les actions nécessaires. Pour ce faire, nous avons réalisé un guide d’entretien auprès des responsables de
contrôle de la qualité. Parallèlement, les analyses effectuées ont porté sur la description morphologique de la datte
(poids, longueur, diamètre, couleur et consistance) et sur la détermination de leurs caractères physico- chimiques et
biochimiques (teneur en eau, cendres, pH, conductivité, sucres totaux, sucres réducteurs et degré Brix), suivies par une
analyse microbiologique de la flore mésophile aérobie totale, coliformes fécaux, levures et moisissures.Le résultat
d’évaluation de l’état actuel de programme pré-requis a montré des forces et des conformités allant jusqu’ à 97,63% ; de
plus l’étude de système HACCP a permis de déterminer un seul CCP et sept (7) PRPO. Les résultats obtenus relatifs aux
propriétés physico-chimiques et biochimiques révèlent que globalement, les dattes Tayba sont conformes et répondent
aux exigences de la norme. Sur le plan hygiénique, les résultats ont montré une qualité microbiologique satisfaisante pour
les FMAT, les coliformes fécaux et les levures.
