Abstract: | Le lait de chamelle est considéré comme une précieuse source alimentaire tant sur le plan nutritif que thérapeutique.
Traditionnellement, l’élevage des dromadaires se basait sur l’alimentation exclusive des plantes des parcours. Récemment, certains
chameliers ont introduit l’élevage semi intensif. L’objectif de la présente étude est de voir l’influence de cette transition sur quelques
paramètres physico-chimiques caractérisant les productions laitières camelines. Les résultats ont montré que certains paramètres
changent avec le nouveau système d’élevage. Nous pouvons citer dans ce contexte, la conductivité électrique qui est égale à 7,42 ms/
cm et 7,18 ms/ cm, respectivement pour le système traditionnel et pour le système semi- intensif du lait camelin, le pH 6,80 ±0,00 et
l’acidité titrable 18 ,78±1,45°D pour l’élevage extensif et pH 6,63±0,05 et acidité 18,66 ±1,00 pour d’élevage semi-intensif. La
qualité microbiologique estimée à travers la FAMT (193.104±0,35 et 73.105±0,12) coliforme totaux (116.104±0,64 et 259.104±0,28)
bactéries lactiques (83.105 ±0,55 et 125.105 ±0,20) et les Staphylococcus aureus absent pour les deux systèmes d’élevage Camel milk is considered a valuable source of food both nutritionally and therapeutically . traditionally, dromedary breeding was based on the exclusive feeding of the plants of the courses. Recently, some camel drivers have introduced semi-intensive breeding. The aim of this study was to investigate the influence of this transition on some physico-chemical parameters characterizing camel milk production. The results showed that some parameters change with the new breeding system. We can quote in this context, the electrical conductivity which is equal to 7,42ms/cm and 7,18ms/cm, respectively for the traditional system and for the semi- intensive system.and camel milk with a pH of 6,80 ±0,00 and titratable acidity 18 ,78±1,45°D for extensive rearing and pH6,63±0,05 and acidity 18,66 ±1,00 for semi-intensive breeding and microbiological quality for FAMT (193.104±0,35 and 73.105±0,12) and coliforme totaux (116.104±0,64 ; 259.104±0,28)et bactérie lactique (83.105 ±0,55and 125.105 ±0,20) and absent staphylococcus aureus for both breeding systems يعتبر حليب الناقة من أهم المصادر الغذائية وكان في ما مضى رعي الجمال الطريقة الوحيدة لتغذيتها العلاجية اما في يومنا هذا فقد اعتمد المربونعلى التغذيتين الداخلية و الخارجية استهدفت دراستنا تأثير التغير في طريقة تغذية الجمال على بعض الخصائص الفيزيوكيميائية المميزة لإنتاج حليب الناقة توصلنا الجديدة في تربية هذه الماشية أثرت على بعض الميزات بالنسبة للنظامين الغذائين القديم والجديد من بينهما الناقلية إلى أن الطريقةالكهربائي7,18ms/cm و7,42ms/cmعلى التوالي للنظام التقليدي ونظام شبه مكثف وحليب الإبلpH6,80 ±0,00ودرجة الحموضة,78±1,45°D18للنظام الجديدpH 6,63±0,05ودرجة الحموضة18,66 ±1,00بالنسبة للنظام الشبه مكثف و الجودة الميكروبيولوجيةمن اجل0,35 et±4 193.10FAMT ( 0,12)±5 73.10و±0,28)4 259.10±0,64 et4 e totaux (116.10coliformو±0,20)5 125.10±0,55 et5 83.10bactérie lactique (و غيابles Staphylococcus aureusفي النظامين |
