Abstract: Résumé.- La présente étude a pour objectif d’étudier la consommation et d’établir une typologie des consommateurs à l’égard de la viande cameline dans le Sahara septentrional algérien représenté par la région du Souf. Une enquête de terrain est menée auprès de 102 consommateurs choisis au hasard répartis sur 13 communes de la région d’étude. Les données collectées ont permis d'identifier 3 groupes de consommateurs bien distincts et qui se caractérisent chacun d'entre eux par la fréquence de consommation de la viande cameline, motivations d’achat de cette dernière, et la localisation (consommateurs réguliers 28.4%, consommateurs occasionnels citadins 61.8% et consommateurs occasionnels rurales 9.8%) et ce après avoir entrepris une classification ascendante hiérarchique., il ressort la prédominance de consommation de la viande bovine par rapport à la viande cameline. Au demeurant, cette dernière qui a perdu de sa réputation se limite essentiellement dans la préparation des plats en certaines occasions. Des études approfondies ayant trait à la filière viande cameline s'avère impératives pour identifier les goulots d'étranglement invalidant la promotion de la consommation de la viande cameline .Abstract.- The present study aimed to study camel meat consumption and establish a typology of camel meat consumer in Souf region northern Algerian Sahara. A field survey involved 102 consumers randomly selected spread over13 municipalities of the study area. The collected data allowed to identify 3 groups of consumers well distinguished between them by camel meat consumption frequency, purchase reason of camel meat and location (regular consumer 28.4%, urban occasional consumer 61.8% and rural occasional consumer 9.8%) after a cluster analysis. it comes out the predominance of beef consumption compared to camel meat among consumers, camel meat consumption being less successful in its environment. It is only used to prepare traditional meals cooked in occasions. In-depth studies on the camel meat sector are imperative to identify bottlenecks that are disabling the promotion of camel meat consumption.
