دراسة نظرية لطرق استخلاص سكر التمر

Abstract

يهدف بحثنا هذا إلى دراسة طرق استخلاص السكر من التمر وإمكانية جعله مصدرا بديلا للشمندر السكري وقصب السكر.تمت دراسة سبع طرق للإستخلاص، لكل منها مبدأ خاص، منها من إعتمد على الاستخلاص عبر تمرير الماء الساخن على التمور، ومنها من قام بتعريض مزيج الماء مع التمر للحرارة مباشرة كما حدث في الطرق التقليدية، ومنها من فضل استخدام الطاقة الشمسية كمصدر مباشر للحرارة، ومنها من اعتمد على المعالجة الانزيمية لزيادة المردود. وباختلاف الطرق والظروف التجريبية اختلفت النتائج واختلفت التحاليل لكن رغم ذلك أثبتت جميعها أنه يمكننا استغلال التمور في استخلاص السكر مع اتباع الطرق المناسبة لذلك لعدم خسارة القيمة الغذائية للتمور.

This research aims to study the methods of extracting sugar from dates and the possibility of making it an alternative source for sugar beets and sugar cane.Seven methods of extraction were studied, each with a special principle, some of them relied on the extraction by passing hot water over the dates, and some of them exposed the mixture of water with dates to heat directly as happened in the traditional methods, and some preferred to use solar energy as a direct source of heat, including Who relied on enzymatic treatment to increase the yield. With the different methods and experimental conditions, the results differed and the analyzes differed, but despite that, all of them proved that we can use dates to extract sugar, while following the appropriate methods for that, in order not to lose the nutritional value of dates.
