dc.description.abstractThis study focuses on the evaluation of the in vivo antioxidant activity of flavonoids of aqueous extracts obtained from different maturation stages (second and third stage), carob bean (Ceratonia siliqua L.) harvested in the Boumerdes region. The determination of flavonoids recorded concentrations of 7.5 mg EQ/g plant for the 2nd stage and 0.72mgEQ/gde plant for the 3rd stage. In vivo antioxidant activity is confirmed by all results. The daily oral treatment of flavonoids with aqueous extract resulted in a significant recovery of oxidative stress parameters by reducing lipid peroxidation and stimulating the activities of SOD, CAT and glutathione peroxidase, followed by a marked improvement in the total antioxidant capacity of the blood indicated by decreased blood sugar, mainly with flavonoid extracts from the third stage of maturation of the carob beanen_US
