Abstract: L’Algérie est considérée parmi les principaux pays producteurs de dattes, elle exporte principalement les dattes Deglet Nour, considérée comme dattes nobles dans les marchés européens. De nombreuses variétés sont considérées comme des variétés à dattes de faible valeur marchande. Ces dattes nécessitent une valorisation, par transformation technologique ou biotechnologique, pour augmenter leur valeur marchande. Cette industrie agro-alimentaire, de même, génère d’importantes quantités de déchets, le plus souvent non valorisés, en plus des déchets qui parviennent directement de la palmeraie. Tous ces produits peuvent servir en tant que matières premières dans la fermentation pour la production de divers métabolites tels que : l’acide citrique, acétique, lactique, l’éthanol. L’objet de notre travail est une synthèse des différentes méthodes de bio- valorisation de dattes de faible valeur marchande pour la production de bioproduits ''alcool éthylique, acide acétique, levure boulangère, alimentaire, acide lactique, acide citrique''. La bio-valorisation de l’alcool éthylique se fait par fermentation anaérobiose par l’utilisation des souches de levure Saccharomyces cerevisiae. La production d’acide acétique se fait par fermentation alcoolique en milieu anaérobie, qui assurée par des levures du genre saccharomyces ; suivie d’une fermentation acétique, en aérobiose ; réalisée par des acétobacters. La production des levures est réalisée par fermentation en aérobiose, principalement, par Saccharomyces cerevisiae. La production d’acide citrique se réalise par fermentation en aérobiose par l’utilisation des champignons du genre Aspergillus. Pour l’acide lactique, la fermentation se réalise en anaérobiose par Les lactobacilles de genres : Thermobacterium, Streptobacterium et Betabacterium ou les Lactocoque de genre Streptococcus ou par des champignons de genre Rhizopusoryzae. La production d’α-amylase se fait par l’utilisation d’Aspergillus niger ou par Candida guilliemondii

Algeria is considered among the main date producing countries, it mainly exports Deglet Noor dates, considered as noble dates in European markets. Many varieties are considered low-value date varieties. These dates require recovery, by technological or biotechnological transformation, to increase their market value. This agro-food industry, likewise, generates large quantities of waste, which is often not valued, in addition to the waste which comes directly from the palm grove. All of these products can be used as raw materials in fermentation for the production of various metabolites such as: citric, acetic, lactic acid, ethanol. The object of our work is a synthesis of the different methods of bio-valorization of dates of low market value for the production of bioproducts "ethyl alcohol, acetic acid, baker's yeast, food, lactic acid, citric acid". The bio-valorization of ethyl alcohol takes place by anaerobic fermentation using the yeast strains Saccharomyces cerevisiae. The production of acetic acid takes place by alcoholic fermentation in an anaerobic medium which is ensured by yeasts of the saccharomyces genus; followed by acetic fermentation, aerobically; carried out by acetobacter. Yeast production is carried out by aerobic fermentation, mainly by Saccharomyces cerevisiae. The production of citric acid is carried out by aerobic fermentation using fungi of the genus Aspergillus. For lactic acid, fermentation is carried out anaerobically by lactobacilli of the genera : Thermobacterium, Streptobacterium and Betabacterium, or Lactococcus of the genus Streptococcus or by fungi of the genus Rhizopusoryzae. The production of α-amylase occurs through the use of Aspergillus niger or by Candida guilliemondii
