| dc.description.abstract | Cette étude s'inscrit dans le cadre de l'exploration de la valeur technologique des bactéries lactiques extraites du lait de chameau. 22 souches ont été isolées à partir de lait cru de chameau provenant de la wilaya de Ouargla et ont été soumises à des tests physiologiques et biochimiques pour déterminer leur capacité à produire des polysaccharides extracellulaires (EPS). Dix souches ont montré une capacité remarquable à produire des EPS, en quantités variant entre 0,63 et 2,41 grammes/litre. Les groupements fonctionnels et les composants de ces sucres ont été déterminés à l'aide d'un spectromètre FTIR, HPLC, GCMS et un test DPPH a été effectué pour déterminer l'activité biologiques(anti-oxydante) remarquable. Les résultats indiquent le potentiel prometteur de ces souches et EPS dans les applications alimentaires et pharmaceutiques, notamment en termes d'amélioration de la texture et des fonctions biologiques. | en_US |
| dc.description.abstract | This study is part of the exploration of the technological value of lactic acid bacteria extracted from camel milk. 22 strains were isolated from raw camel milk from the Ouargla region and were subjected to physiological and biochemical tests to determine their ability to produce extracellular polysaccharides (EPS). Ten strains showed a remarkable ability to produce EPS, in quantities ranging from 0.63 to 2.41 grams/liter. The functional groups and components of these sugars were determined using an FTIR spectrometer, HPLC, GCMS and a DPPH test was conducted to determine the remarkable antioxidant activity. The results indicate the promising potential of these strains and EPS in food and pharmaceutical applications, particularly in terms of improving texture and biological functions. | - |
| dc.description.abstract | تندرج هذه الدراسة في إطار استكشاف القيمة التكنولوجية للبكتيريا اللبنية المستخرجة من حليب اإلبل. تم عزل 22 ساللة من حليب اإلبل الخام القادم من والية ورقلة وتم إخضاعها الختبارات فسيولوجية وكيميائية حيوية لتحديد قدرتها على إنتاج السكريات المتعددة خارج الخلية .(EPS( أظهرت عشر سالالت قدرة ملحوظة على إنتاجEPS ، بكميات تتراوح بين 63.0 و41.2 جرام/لتر. تم تحديد المجموعات الوظيفية و مكونات هذه السكريات باستخدام مطيافFTIR , HPLC ,GCMS وتم إجراء اختبار DPPH لتحديد النشاط البيولوجي)المضاد لألكسدة( الملحوظ . تشير النتائج إلى اإلمكانات الواعدة لهذه السالالت و EPS في التطبيقات الغذائية والصيدالنية، ال سيما من حيث تحسين القوام والوظائف البيولوجية | - |
