dc.description.abstractRésumé Notre travail qui consiste à faire une analyse sensorielle de 30 échantillons de miels provenant de différentes wilayas du sud algérien ; Biskra, Laghouat, Ghardaïa, Bechar, et Naama ; dont l’objectif est de faire ressortir leurs caractéristiques, et d’établir dans le future des normes d’identification des miels saharien. L’analyse à été effectuée par un jury de dégustateur formé préalablement composé de huit (08) personnes. Les résultats obtenus nous ante permis de tester et de mettre au point une fiche préliminaire de description des Caractéristiques des miels locaux qui a montré une diversité dans couleur ; l’arôme et le goût. summary Our work is to make a sensory analysis of 30 honey samples from different provinces of southern Algeria, Biskra, Laghouat, Ghardaia, Bechar, and Naama, whose aim is to highlight their characteristics, and to establish the future standards for the identification of honeys Sahara.
