dc.description.abstractThree date varieties (Phoenix dactylifera L.) in Ouargla region were studied. The results showed the existence the morphological differences between the three varieties, according to their color, consistency, texture and pit/date ratio. The analysis of the pulp shows that the soft variety is rich with reducing sugars and glucose comparatively with the other varieties. The semi-soft variety is characterized by difference kinds of sugars with the dominance of the reducing sugars. But, the dry variety has an important acidity and high levels of sucrose and protein.en_US
