Abstract: The presence of fungal flora in cereals for human food can lead a serious consequences for his health. The development of this plant is among the leading causes of impaired health cereals. The quality control of the wheat during storage can reduce the loss of product caused by these fungi. It is a means of prevention and management of risks of contamination by fungi, some of which may be highly toxigenic. The study of the physicochemical and mycological quality samples of local and imported wheat stored at OAIC of Saida, showed that the rate of contamination of the imported variety is very high . The genus Aspergillus represented by different species was found in both varieties analyzed with a frequency and an abundance ranging from 41 to over 86% of the total flora identified on medium CDA and PDA. Genera Penicillium and Alternaria are uncommon. Finally, the genera Cladosporium, Fusarium and Ulocladium are less abundant in both wheat varieties analyzed.
