dc.description.abstract | Cette étude comparative, en se basant sur un certain nombre de paramètres physico-chimiques, nous a permis de faire un rapprochement des les valeurs de la vitamine C, des laits camelin et humain (11,14mg/l) (13,32mg/l) respectivement et aussi de la matière sèche totale (118g/l). En revanche le lait de chamelle est plus riche en protéine (32,19g/l) que le lait humain (14,03g/l).Toutefois une différence est à signaler dans les valeurs de la conductivité (4,15mS/cm) pour le lait de chamelle et (2,44mS/cm) pour le lait de femme. De même, la teneur en cendre du lait de chamelle est beaucoup plus élevée (5g/l) par rapport à celle de lait de femme (1,66g/l). Le lait camelin est aussi plus riche en matière grasse (50g/l) contre (43,33g/l) pour le lait humain. L'acidité qui est inversement proportionnelle au pH (20,66°D) est très remarquée chez le lait camelin que chez le lait humain (10°D) et enfin la mesure de la densité a révélé que le lait camelin est moins dense(1,025) que le lait humain (1,035). | en_US |
dc.description.abstract | This comparative study , based on a number of physico- chemical parameters , allowed us to make an approximation, between the values of vitamin C in camel and human milk ( 11.14 mg / l ) (13 , 32mg / l ) respectively. Also there is similitude in the values of total solids ( 118g / l ) in each milk . however camel milk is richer in protein ( 32.19 g / l) than human milk ( 14.03 g / l). The difference is reported in the values of the conductivity, (4.15 mS / cm) for camel milk and (2.44 mS / cm) for human milk . Also the ash content in the camel milk is much higher ( 5g / l) compared to that of human milk (1.66 g / l ) . The camel milk is also richer in fat (50g / l) against ( 43.33 g / l) for human milk. The acidity which is inversely proportional to the pH ( 20.66 ° D ) is very important in the camel milk than in human milk ( 10 ° D ) and finally the density measurement revealed that the camel milk is less dense ( 1.025 ) than human milk ( 1.035 ) | - |
