Abstract: | Ce mémoire est inscrit dans le but de faire un recyclage des sous-produits aquacoles pour les transformer aux dés
matières primaires, nous avons fait une extraction chimique des produits chitineux à partir des écailles de Tilapia de
Nil, en procédant au dévoilement de leurs caractéristiques physico-chimiques obtenues par voie chimique ; le degré
d’acétylation, le degré de dépolymérisation et l’indice de cristallinité. Ce travail nous a permis de déterminer la
morphologie de la chitine a été observée à travers la microscopie électronique à balayage (MEB), leur structure a été
déterminée par la spectre-infrarouge et les phases cristallisées par la diffraction de rayon X. Dans son acception
générale, le présent travail vise la valorisation des sous-produits aquacoles, ainsi que la recherche d’autres sources
alternatives de ces matériaux polysaccharides.

Key words: polysaccharides, valorization, extraction, chitin, chitosan, aquaculture by-products. scales of Nil Tilapia قمنا في إطار هذه المذكرة بتدوير المنتجات الثانوية من المنتجات المائية وذلك لتحويلها الى منتجات أولية، وذالك عن طريق استخالص الكيميائي لمواد الكيتينية المتواجدة في حراشف السمك البلطي النيلي. وحاولنا التعرف على خصائص الفيزيو-كيميائية للنواتج المتحصل عليها من خالل قياس درجة األستلة، درجة التحلل ومؤشر التبلور. سمح لنا هذا العمل من تحديد بنية الكيتين التي تمت مالحظتها من خالل المكبر الماسح االلكتروني، البنية الظاهرية تم التعرف عليها من خالل طيف االشعة ما تحت الحمراء، اما اطوار البلورة فبانتشار االشعة Xخاصية هذا العمل تكمن في تثمين النواتج الثانوية للمنتجات المائية، وكذا البحث عن مصادر بديلة لهذ النوع من متعددة السكريات. كلمات مفتاحية: متعدد السكر، تثمين، استخراج، كيتين، كيتوزان، منتجات مائية ثانوية، حراشيف السمك البلطي النيلي. |
