Abstract: | Le lait présente un milieu favorable au développement des microorganismes. Parmi ces
derniers, la microflore pathogène et d’altération provoquent des troubles chez l’Homme. Dans
ce cadre s’inscrit ce travail. Il vise à aider le consommateur à choisir un lait de bonne qualité
afin de garantir sa santé. Quatre échantillons du lait camelin cru vendu dans la régions
d’Ouargla (échantillon 1 issu d’Elbakrat, échantillon 2 issu de Rouissat, échantillon 3
provient de Belabasse, échantillon 4 acheté d'Ain el Baidaa) ont été étudié .Pour cela nous
avons effectué un test physicochimique consistant en la mesure de l’acidité titrable et des tests
microbiologique consistant en un test de la réductase, recherche et dénombrement des
FMAT, coliformes totaux, coliformes fécaux, Staphylococcus aureus et des levures et des
moisissures.
L’analyse physicochimique a montré que le lait de chamelle présent une valeur moyenne de
l’acidité dornic variable d’un échantillon a une autre.Elle est de l’ordre de (30°D, 29°D, 15°D,
25°D pour les échantions 1,2,3 et 4 respectivement.
Le test de la réductase révèle une bonne qualité pour les échantillons 1, 2, 3, (décoloration de
bleue de méthylène a pris plus de 5 heure) mais une qualité moyenne pour l’échantillon 4.
Concernant la recherche et le dénombrement des indicateurs de la qualité microbiologique du
lait, l’échantillon 3 acheté à Belabasse présente globalement une bonne qualité hygiénique par
rapport aux autres échantillons du lait (absence des coliforme totaux et fécaux, absence de
Staphylococus aureus et le taux de levures et de moisissures le plus faible par rapport aux
autres échantillons19x101UFC/ml). Milk presents an environment favorable to the development of microorganisms. Among the latter, pathogenic and spoilage microflora cause disturbances in humans. This work falls within this framework. It aims to help consumers choose good quality milk in order to guarantee their health. Four samples of raw camel milk sold in the Ouargla region (sample 1 from Elbakrat, sample 2 from Rouissat, sample 3 from Belabasse, sample 4 purchased from Ain el Baidaa) were studied. carried out a physicochemical test consisting of the measurement of titratable acidity and microbiological tests consisting of a reductase test, detection and enumeration of FMAT, total coliforms, fecal coliforms, Staphylococcus aureus and yeasts and molds. Physicochemical analysis has shown that camel milk has an average value of dornic acidity which varies from one sample to another; it is of the order of (30 ° D, 29 ° D, 15 ° D, 25 ° D for samples 1,2,3 and 4 respectively. The reductase test shows good quality for samples 1, 2, 3, (methylene blue discoloration took more than 5 hours) but average quality for sample 4. Concerning the research and the enumeration of the indicators of the microbiological quality of the milk, sample 3 purchased at Belabasse presents overall a good hygienic quality compared to the other samples of the milk (absence of total and fecal coliforms, absence of Staphylococus aureus and the rate yeast and mold growth compared to the other samples (19x101 CFU / ml |
