Abstract: | Extraction et caractérisation des lipides des graines de quinoa variété Q102(chenopodium
quinoa).
La présente étude porte sur l'extraction et la caractérisation physico-chimique et biochimique
de l'huile de graines de quinoa (chenopodium quinoa) variété Q102. L'extraction de l'huile de
graines de quinoa variété Q102 a été faite par deux méthodes chimiques ; macération à chaud
(soxhlet) et par macération froid (méthode de Bligh et Dyer). Le rendement d'extraction estimé
étant de l'ordre de 3.91±0.16% pour la macération à chaud et de 3.11±0.08% pour la macération
à froid. La caractérisation physicochimique des huiles montre que la valeur de l'indice d'acide
est de 0.71±0.29mgKOH/g d'huile, l'indice de saponification est de 168.73±6.55mg de KOH/g
d'huile, 95.14±2.14g/100g d'huile pour l'indice d'iode et 6.46±0.58 milliéquivalent d'O2 actif /
Kg d'huile pour l'indice de peroxyde, la densité qui est de 0.8750 à 25 °C, l'indice de réfraction
à 20 °C égale à 1.359±0.000. Pour la caractérisation biochimique et en examinant l'activité
antioxydant de l'huile a été réalisée par la méthode de piégeage du radical libre DPPH, les
résultats obtenus ont montré l'existence d'une activité antioxydant importante (résultat) pour
huile des graines de quinoa variété Q102 par rapport à l'antioxydant de références, en ce qui
concerne l’activité hémolytique, un grand pourcentage d’hémolyse a été enregistré ce qui
pourrait indiquer un potentiel de toxicité des lipides des graines de quinoa Q102. Enfin, pour le
Profil des acides gras identifiés des lipides des graines de (Chenopodium quinoa) par GCMS/
MS, les résultats obtenus montre que la variété Q102 est riche en acide mystirique,
caproïque, palmitique, linoléique et l'acide oléique.. Extraction and lipid characterization of quinoa seed variety Q102(chenopodium quinoa). The present study focuses on the extraction and physico-chemical and biochemical characterization of quinoa seed oil (chenopodium quinoa) variety Q102. The extraction of quinoa seed oil variety Q102 was done by two chemical methods; hot maceration (soxhlet) and cold maceration (Bligh and Dyer method). Finally, for the Profile of fatty acids identified from seed lipids (Chenopodium quinoa) by GC-MS/MS, the results obtained show that the variety Q102 is rich in mystical acid, caproic acid, palmitic, linoleic and oleic acid |
