This study was conducted within the framework of valorizing Ghars date fruits from the Ouargla region through their processing into jam. The main objective was to develop an appropriate date jam formulation, evaluate its physicochemical, biochemical, and sensory quality, and determine its content of bioactive compounds as well as its antioxidant capacity using the DPPH• free radical scavenging assay. Three jam formulations were prepared: date jam, date jam supplemented with pumpkin, and date jam supplemented with cinnamon. The physicochemical analyses showed that the pH values of the jams ranged from 5.17 to 5.58, titratable acidity varied between 0.21 and 0.33%, and soluble solids content ranged from 60.23 to 62.13%. Regarding mineral composition, the date jam with cinnamon exhibited the highest levels of iron (2.33 mg/100 g) and magnesium (2.78 mg/100 g). Thin-layer chromatography (TLC) analysis of sugars revealed the presence of glucose, fructose, and sucrose. The date jam with cinnamon showed the highest vitamin C content (8.87 mg/100 g). The highest total phenolic content was recorded in the date jam, reaching 42.68 mg gallic acid equivalent (GAE)/100 g. In contrast, the date jam with pumpkin exhibited the highest flavonoid content, with 12.96 mg rutin equivalent (RE)/100 g. The antioxidant activity assessed by the DPPH assay indicated that the date jam with cinnamon possessed the strongest antioxidant capacity, with an IC50 value of 4.70 mg/mL. Sensory evaluation performed using a hedonic test showed that the date jam with cinnamon was the most appreciated by consumers, followed by the date jam and then the date jam with pumpkin. In conclusion, all three jam formulations demonstrated satisfactory technological quality. Therefore, the processing of Ghars date fruits into jam represents a promising approach for the valorization of local resources and the production of foods with high nutritional and functional value.
