Faced with the increasing demand from the food industry for natural alternatives to synthetic colorants, this study explores the potential of seven chromatic variants of Bougainvillea spectabilis as a source of betalains and phenolic compounds. The methodological approach combined acidified hydro-ethanolic extraction, UV-Visible spectrophotometry (quantification of pigments and total phenolic content), evaluation of antioxidant activity (DPPH assay), and IV colorimetric analysis using the CIELAB space. Extract stability was monitored over a fivemonth period at 4°C, and freeze-drying (lyophilization) was implemented to produce pure pigment powders. The results reveal significant metabolic heterogeneity among the studied chemotypes. The Orange A variant exhibited the highest total pigment load (98,322.67 µg/g), primarily dominated by betaxanthins. Conversely, Light Pink bracts recorded the highest phenolic content (5,360.42 µg GAE/g). Interestingly, the White extract showed the most potent antioxidant performance (80% inhibition), suggesting a synergy with colorless secondary metabolites. From a technological perspective, freeze-drying optimized color saturation (Chroma), while the stability study demonstrated superior acid-base inertia in orange and yellow variants, contrasting with the critical alkaline drift observed in pink variants. In conclusion, while B. spectabilis emerges as a promising source of multifunctional biomolecules (colorants and antioxidants), its industrial exploitation as a "clean label" ingredient requires further research to validate its thermal stability and molecular interactions within complex food matrices.
